Margarita Grilled Chicken
Last Friday I shared one of my very favorite was to get a meat and veggie meal together FAST. My grill and/or grill pan! I can layer the meat and veggies all at once and be free to unload my dishwasher and refill my water bottle 🙂
I also said I would share my new favorite marinade for chicken. It may be awesome with beef too…
I call this Margarita Grilled Chicken because the flavors blend so nicely and the lime brings out the fresh flavors.
Whether you cook this on your outdoor grill or on the grill pan, throw a veggie on with it. This makes life so much easier and the flavors of grilled veggies are in my opinion the best way to veggie! This is the perfect meal for gastric sleeve and gastric bypass patients- a simple way to get new flavors and prevent getting bored with foods!
Margarita Grilled Chicken
Ingredients
- 3 limes, juiced
- 1 orange, juiced
- 3 cloves garlic, pressed or minced
- 3 no calorie sweetener packets of choice (optional)
- 1 lb boneless, skinless chicken breasts
Instructions
- Place all ingredients except chicken into a bowl or small baking dish. Add chicken and let marinade for 30 minutes before grilling.
- Heat a grill pan or outdoor grill to medium high heat. Add chicken and close the grill lid (or cover with lid if using stove top). Consider adding mini sweet peppers, zucchini, onion or other vegetables for the meal.
- Grill for approximately 8-10 minutes per side depending on thickness, flipping once. Check internal temp is at 160 before removing from heat (it will continue to cook a bit to reach 165). Depending on the vegetable, it may need to be flipped and/or removed prior to the chicken reaching doneness.
