Bariatric Recipe for broccoli salad using lower fat and sugar ingredients

I love the vibrant colors and fresh flavors of broccoli salad (broccoli slaw)? Just a few tweaks to this recipe will bring down the fat and sugar content of a more traditional version.

I used a pomegranate vinegar because I had it on hand, purchased from Aldi. You can also use apple cider vinegar! Similarly, I used pepitas for preference but if sunflower seeds are more available to you it’s a simple swap!

Avoiding adding dried fruits like raisins or craisins. Fresh chopped apple provides the fruity sweetness (plus some stevia packets) though dried fruits have more concentrated sugar.

I love the fresh crunch and slightly creamy texture of this broccoli salad. A few ingredient swaps help this broccoli salad remain lower in sugar and fat than a traditional recipe.

Ingredients

  • 1 lb broccoli crowns cut large pieces into smaller pieces
  • 3 cups broccoli slaw bagged
  • 1/2 apple diced
  • 6 slices turkey bacon cooked, diced
  • 1/2 cup pepitas or sunflower seeds
  • 1/2 cup Greek Yogurt plain, 0% fat
  • 1/4 cup mayo light
  • 1/4 cup pomegranite vinegar or apple cider
  • 6 packets stevia

Instructions

  • Add broccoli crowns and bag of slaw to a large bowl. Use kitchen shears to chop down any large pieces.
  • Add diced apple, turkey bacon and pepitas
  • In a small bowl mix the mayo, Greek yogurt, vinegar and stevia packets. Pour over slaw mixture and mix well.
