Dijon and Thyme Pork Tenderloin

Ingredients

lean pork tenderloin

tbsp
dijon mustard
1
tsp
dried thyme leaves

small
sweet onion, sliced thinly
salt & pepper to taste
Instructions
Heat oven to 400 F.
In a small bowl, stir together mustard and thyme. Coat pork with mustard mixture.
Place sliced onion in a thin layer on the bottom of a baking dish. Place pork on top of onion.
Cook for 20-25 min or until internal temp reaches 145 F. Remove from oven, let sit a few minutes. Slice and serve.
