Spiced Yogurt Marinated Chicken – WLS Recipes
If you happen to subscribe to Rachael Ray’s Magazine “Every Day with Rachael Ray” then you will probably recognize a few of the recipes I post this week 🙂
For me, the magazines are hit or miss…but when they hit…they hit! This months edition included a small pamphlet focusing on grilling out. Many of the marinades or toppings included juice or brown sugar, so I did have to spend some time filtering out unwanted recipes. I did, however, find this great idea for a Spiced Yogurt Marinade and tweaked the recipe for a version I felt was a better fit for Bariatric patients!

We didn’t need much sauce because the marinade locks in the moisture. If you want a bit of sauce, use a low sugar bbq sauce and measure out about 1 tbsp to stay moderate! 🙂Â

Spiced Yogurt Marinated Chicken - WLS Recipes
Ingredients
- 1 cup 0% fat, plain Greek yogurt
- 2 tsp olive oil
- 2 cloves garlic, pressed
- 2 tsp cumin
- 1 tsp cayenne pepper
- 4 (4 oz) boneless, skinless chicken breast
- 1 lemon, cut in half
Instructions
- In a bowl, whisk together Greek yogurt, olive oil, garlic, cumin and cayenne pepper.
- Season both sides of chicken with a pinch of salt and pepper. Add the chicken to the marinade, cover and put in the refrigerator at least 30 minutes, an hour is even better.
- Heat an outdoor grill or indoor grill pan. Once heated, add chicken. Place lemon halves (cut side down) on the grill as well. Grill 6-8 minutes per side depending on thickness of the chicken. Check the internal temp is at 165 F.
- Remove from heat, squirt lemon juice on each chicken breast for added flavor.
