Ingredients

  • 1 large zucchini
  • 1 egg, beaten
  • 1/2 tsp each salt and pepper
  • 3/4 cup reduced fat grated parmesan cheese

Instructions

  • Rinse and pat dry zucchini. Cut off ends of zucchini. Place a cheese grater over a medium bowl and grate zucchini on the cut side for shorter strands.
  • Add remaining ingredients to the bowl and mix well. Heat a large griddle plan to medium to medium-high heat.
  • Scoop 1/4 cup zucchini mixture onto preheated skillet and flatten with a spatula. Flip when bottom looks like it's beginning to crisp.
  • Cook another minute on the other side. Serve alongside chicken, fish, pork or beef.
