Sweet Baby Carrots


Here’s a bariatric friendly side dish that is almost too easy that I forgot to share! Some recipes are so second nature to my that it doesn’t even cross my mind to make it a blog post.

Some of you will be bored with how simple this post is…no problem. I have plenty of more exciting recipes for you to try 🙂

For many others of you, it might be exciting to think…wait, that’s it??

When I lived in Oklahoma I was introduced to sweet carrots. Meaning, they had a ton of butter and brown sugar and amazingly glazed.

I’ve only ever had steamed, cooked carrots. Unless they were raw with a dip or cooked in a soup or stew. It never crossed my mind for them to be sweet! Also, did you know you can mash them too? I know it’s crazy but just in case you want to find out…click here 🙂 

It turns out sweet baby carrots are amazing. Who would have thought covering a vegetable in sugar would work so well?! Mind blowing. But seriously, this simple addition of a no calorie, natural sweetener such as truvia and a few sprays of butter spray will make your carrot side dish a little on the sweet side. And I am A-OK with that.

I personally pair something like this with barbecue such as the pulled pork below:

Sweet Baby Carrots

Course: Vegetables

Ingredients

  • 1 lb baby carrots
  • 1/4 cup natural no calorie sweetener
  • 10 sprays butter spray

Instructions

  • Place carrots in microwave safe bowl and fill with water until covered. Microwave 6 minutes. Drain.
  • Spray the carrots 5 times with butter spray and toss. Spray 5 more times and toss again.
  • Add sweetener and toss continuously until it has dissolved.
