Preheat oven to 400F. Lightly rub olive oil on a baking stone or line a cookie sheet with foil.
Remove stems and leaves from cauliflower and roughly chop it. Add to a food processor or high powered blender. Blend/process until it looks almost like a paste.
Scoop the mixture into a microwave safe bowl. Microwave 6 minutes.
*Optional: add ground turkey as a topping - brown ground turkey with 1/2 tsp salt, 1/2 tsp pepper, 1 tsp oregano and 1 tsp Italian seasoning.
Once cauliflower is done, add the rest of the crust ingredients to the bowl: egg, garlic, cheese and seasonings. Mix together well until it starts looking like a dough ball. Using a large spoon, make the small crusts on the baking stone/sheet and spread out with the back of a spoon.
Bake in 400F oven for 25 minutes. Once it is done; put it in the oven. Set to broil. Add the toppings (marinara sauce, pepperoni, cheese) and put under the broiler for 5 minutes. Remove from oven, let cool and serve.
