After weight loss surgery, you have to get creative in how to enjoy the flavors of pizza without the troubles of pizza.
Sure you can have the toppings and, on occasion, that’s probably fine. Of course the higher fat content is just that…high fat…and could cause stomach upset aside from extra calories.
On the “non-splurge” moments when you don’t want to have pizza toppings, there are other creative ways to enjoy the flavors!

Pizza Chicken with Turkey Pepperoni
Cauliflower Mini Pizza
Servings: 8 small pizzas

Ingredients
- 1 head cauliflower
- 2 cloves garlic, pressed or minced
- 1 cup 2% mozzarella cheese, shredded
- 1 egg beaten
- 1 tsp Italian seasoning
- 1 tsp oregano
- 16 pieces turkey pepperoni
- 1/2 cup shredded part-skim mozzarella cheese
- 8 oz tomato sauce
Instructions
- Preheat oven to 400F. Lightly rub olive oil on a baking stone or line a cookie sheet with foil.
- Remove stems and leaves from cauliflower and roughly chop it. Add to a food processor or high powered blender. Blend/process until it looks almost like a paste.
- Scoop the mixture into a microwave safe bowl. Microwave 6 minutes.
- *Optional: add ground turkey as a topping - brown ground turkey with 1/2 tsp salt, 1/2 tsp pepper, 1 tsp oregano and 1 tsp Italian seasoning.
- Once cauliflower is done, add the rest of the crust ingredients to the bowl: egg, garlic, cheese and seasonings. Mix together well until it starts looking like a dough ball. Using a large spoon, make the small crusts on the baking stone/sheet and spread out with the back of a spoon.
- Bake in 400F oven for 25 minutes. Once it is done; put it in the oven. Set to broil. Add the toppings (marinara sauce, pepperoni, cheese) and put under the broiler for 5 minutes. Remove from oven, let cool and serve.
