Chicken Parmesan Mini Meatloaf - Bariatric Sized Meal!

Ingredients

ground chicken

egg

cup
reduced fat grated parmesan cheese

tbsp
Italian seasoning
1/2
tsp
each salt and pepper
1
cup
white onion, diced
1/2
cup
marinara sauce (lowest sugar available)
1/2
cup
part-skim mozzarella cheese, shredded
Instructions
Heat oven to 350F. Spray a muffin pan with cooking spray or olive oil.
Combine ground chicken with egg, seasonings, parmesan cheese and onion. Mix until well combine.
Use a cookie scoop or two large spoons to spoon mixture evenly into 12 meatloaf wells.
Spoon a dollop of marinara sauce on each meatloaf. Bake for 20 minutes.
Remove from oven and sprinkle shredded cheese on each meatloaf. Bake another 3 minutes. Double check internal temperature reads 165 for poultry!
Notes
Recipe makes 12 mini meatloaves. One serving is two meatloaves.
