White Enchilada Zucchini Boats

Ingredients

  • 3 medium zucchini
  • 6 oz cooked chicken, diced or shredded
  • 4 wedges The Laughing Cow Cheese® Queso Fresco
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 1/4 cup pickle jalapeño slices, chopped

Instructions

  • Preheat oven to 350 F degrees.
  • Meanwhile, scoop out insides of zucchini and discard insides. In a separate bowl combine chicken, The Laughing Cow® wedges, 1/4 cup shredded cheese and jalapeños. Mix together well and scoop into zucchini boats.
  • Top zucchini boats with remaining cheese and a few extra jalapeños to be cute ;-) Bake for 25 minutes and serve.
