It’s amazing what can be done with a hollowed out zucchini. I mean seriously! Did you ever think so much good could come of this vegetable that we didn’t do much with for so long?

It simply amazing me what this vegetable can do for a low-carb diet! I’m quite thankful to God for created them 🙂 If you follow a low-carb diet or have had weight-loss surgery like a gastric sleeve or gastric bypass…I hope you’ve found the versatility of the zucchini. Ingredients

  • 3 medium zucchini
  • 6 oz cooked chicken, diced or shredded
  • 4 wedges The Laughing Cow Cheese® Queso Fresco
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 1/4 cup pickle jalapeño slices, chopped

Instructions

  • Preheat oven to 350 F degrees.
  • Meanwhile, scoop out insides of zucchini and discard insides. In a separate bowl combine chicken, The Laughing Cow® wedges, 1/4 cup shredded cheese and jalapeños. Mix together well and scoop into zucchini boats.
  • Top zucchini boats with remaining cheese and a few extra jalapeños to be cute 😉 Bake for 25 minutes and serve.
