Buffalo Turkey Stuffed Bell Peppers
There are two veggies I love stuffing more than anything. Zucchini and bell pepper. These types of recipes are perfect for bariatric patients because they can focus on the protein inside the veggies and also enjoy the vegetables all within one dish!
Some of my favorite zucchini boat recipes include White Enchilada Zucchini Boats and Zucchini Pizza Boats. Yummy!
As for stuffed bell peppers? Well, this Buffalo Turkey Stuffed Pepper is certainly up there along with Italian Stuffed Red Peppers and these Tex Mex Peppers. Okay, I’m really getting hungry over here.
Buffalo sauce is a great condiment to liven up your Bariatric pantry. Yes, I am talking about Buffalo Wing Sauce. It’s only 15 calories per tablespoon (depending on the brand). It’s not the buffalo sauce that makes wings high in fat. It’s the dark meat of the wing and the RANCH it gets dipped in!

Buffalo Turkey Stuffed Bell Peppers
Ingredients
- 1 lb 93% lean ground turkey
- 1 packet dry ranch seasoning
- 1/2 cup buffalo wing sauce
- 2 large bell peppers (red or yellow preferred)
Instructions
- Preheat oven to 350F.
- Cut bell peppers in half lengthwise and seed. Place on a baking sheet or stone.
- Heat skillet to medium heat and brown ground turkey. Drain.
- Add ranch seasoning packet and wing sauce and stir. Cook another minute.
- Scoop turkey mixture into bell pepper halves. Bake for 20 minutes for more firm textures (my choice) or 30 minutes for softer texture.
- Remove from heat. Drizzle with a bit more wing sauce. Let cool and serve.
