Creamy Cilantro Chicken Wraps
Bariatric lunch or dinner with shredded chicken, cilantro avocado dressing

Cook chicken once, shred and add different toppings for different nights!
The Creamy Cilantro dressing used in this recipe is one of my favorites and great news, I bought it at Walmart. Sure every region will differ but my hope is that means it’s an easily available dressing for the majority of you!


Chicken can get old so finding new ways to flavor such a great protein source is so important. With prices of chicken lately, I’ve found its best to purchase a larger package and make a few chicken dishes with different flavors.
In this situation, you could cook the chicken with basic seasonings, shred the chicken (I love my meat shredders) and then use different sauces or dressing to flavor the shredded chicken.
My pick would be this amazing salad dressing.
Next up, though, I would use marinara sauce and mozzarella cheese.
Or salsa and cheddar cheese.
Or buffalo sauce and light ranch.
Or barbecue sauce and steamed carrots on the side.
I’ve been using my new vacuum sealer quite often these days so my next thought is to make that chicken, shred that chicken, divide it into bags and add some sauce or dressing and freezing it for a fast dinner another night!

Creamy Cilantro Chicken Wraps
Ingredients
- 1 lb chicken breast boneless, skinless
- 2 tbsp water
- 1 tsp salt
- 1/2 tsp garlic powder
- 1 tsp white pepper black pepper okay
- 1 cup cilantro avocado yogurt dressing Bolthouse Farms (purcahsed mine at Walmart)
Instructions
Slow Cooker
- Add chicken, 2 tbsp water and seasonings to the bottom of a slow cooker. Cook on low for 6 hours. Remove to a large bowl and shred.
- Add 2/3 to 1 cup of the dressing depending on how coated you like the chicken. (nutrition label is for 1 cup dressing)
- Serve over bib lettuce and enjoy!
Pressure Cooker
- Add chicken, 1 cup chicken broth (water okay) and seasonings to the bottom of a slow cooker. Pressure cook 12 minutes and quick release. Remove to a large bowl and shred.
- Add 2/3 to 1 cup of the dressing depending on how coated you like the chicken. (nutrition label is for 1 cup dressing)
- Serve over bib lettuce and enjoy!
