Ready for a “one pan wonder” with an Italian-y Chicken result?? I love the warm and hearty flavors of this tomato and mozzarella chicken recipe. Using chicken tenderloins not only makes this recipe cook faster, it’s also perfect for postop bariatric surgery patients. If you’ve had weight loss surgery, be sure to take very small bites, eat slowly and avoid fluids with your meal. This will allow you to fill up comfortably on your protein based meal and stay full for hours!

Ingredients

  • 1 lb chicken breast tenderloins
  • 1/2 tsp each salt & pepper
  • 1 cup chopped onion
  • 2 cloves garlic, minced/pressed
  • 1 cup chopped tomato
  • 3/4 cup Marinara Sauce (lowest sugar you can find!)
  • 1 tbsp chopped oregano (dried)
  • 2 oz fresh mozzarella, torn into small pieces

Instructions

  • Preheat oven to 400F.
  • Heat a large skillet over medium heat. Spray with cooking spray. Sprinkle chicken with 1/4 tsp each salt & pepper. Add chicken to pan, cook 5 minutes. Turn and cook 2 minutes. Remove chicken from pan.
  • Add onion and garlic to the pan and saute 2 minutes. Add remaining 1/4 tsp salt & pepper, diced tomato, marinara sauce and oregano to the pan. Return chicken to the pan. Sprinkle fresh mozzarella pieces over the top of the chicken.
  • Place in the oven for 6-8 minutes (and make certain chicken is done as cooking time vary with thickness!) Let cool a bit and serve.
