Creamy Tomato Crockpot Chicken | WLS Recipe

I love this simple recipe for Creamy Tomato Chicken breasts and I know you will too!

Post-ops: I know many of you don’t have the best relationship with chicken breasts BUT know that this chicken is super tender after being cooked on low for hours in a tomato sauce mixture. It’s also full of flavor and you can great creative with seasonings!

And I know what else you are thinking. We can have Alfredo sauce??

I mean. Kind of. This calls for one cup of Alfredo sauce which is STILL over 200 calories because it’s high fat. The only reason I’m okay with using it in this recipe is because you only actually consume a fraction of it within the meal. The sauce is mostly just for cooking and flavoring the chicken, but the sauce is mostly discarded.

Pull out the chicken breasts and top it with a little of the diced tomatoes. The flavor is awesome and you only get a touch of Alfredo. Serve it with your favorite veggie and enjoy!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp dried basil leaves
  • 1/2 tsp dried oregano
  • 1/4 tsp pepper
  • 1 cup alfredo sauce
  • 1/2 (14 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce

Instructions

  • Place a slow cooker liner bag in the bottom of a slow cooker (Crockpot®) for easy cleanup.
  • Combine seasonings in a small bowl and coat chicken with seasoning. Arrange the seasoned chicken breasts on the bottom of the slow cooker.
  • In a separate bowl, combine Alfredo sauce, tomatoes and tomato sauce. Cover chicken with tomato mixture.
  • Cook on low for 6 hours (you may want to adjust this time if your slow cooker runs hot like mine! I only need 4 hours on low for cooked chicken).
  • Serve with veggies.

Notes

**Note: much of the sauce is discarded after chicken is cooked so it is likely you are consuming less fat and carbohydrates than calculated above.
