After Weight-Loss Surgery, it can be really hard to keep variety in your protein foods. Another hamburger patty??? ANOTHER baked chicken breast? Oh don’t even talk to me about tilapia right now.
But alas, we know the best way towards reaching weight-loss goals is to hit the protein. The more lean, the more solid, the more dense….the better. Chicken. Lean Beef. Lean Pork. Bring it on.
Seasonings play a major role in keeping you on track with your post-op diet. Without “spicing it up a bit” (pun intended) you’ll find yourself food fatigued and tired of everything healthy. This is when temptations get stronger. When you are sick and tired of your healthy options…you’ll give in to the foods of your past!
BUT! If you keep variety in flavors, you’ll be satisfied with what you have and way more prepared to fight back against tempting foods.
SO! Use the seasonings aisle to your full advantage. I picked up a packet of Pesto Seasoning and used it as a rub on chicken breast. This took our baked chicken meal to another level! Cooking tip: if you have stoneware you can bake this chicken in…USE IT! Stoneware locks in moisture and keeps your chicken from drying out.Â
Easy Pesto Baked Chicken - WLS Recipe
Ingredients
- 1 lb boneless, skinless chicken breast
- 1 packet Pesto seasoning
- 1 tbsp olive oil
- 4 slices provolone cheese
- *Steamed veggies on the side
Instructions
- Heat oven to 350 F.
- Rub chicken breast with olive oil and then spread Pesto seasoning evenly over all chicken breasts.
- Place chicken in the bottom of a casserole dish. **Stoneware dish recommended for best results but not required.
- Layer with cheese slices.
- Bake for 25 minutes or until internal temperature of chicken is 165F. Serve with steamed veggies.
