If you have not already tried egg roll bowl for dinner, I recommend doing so! The flavors are an exciting change of pace but with a packaged bag of salad or cole slaw mix, it is very easy to put together.

This recipe for Egg Roll Salad Jars is only slightly different because of what I had on hand the day I created it. I wondered if I could make this into a salad jar recipe for easy lunches.
I made the recipe like I normally would for dinner and put half aside for dinner (below). The remaining ingredients I kept separated until I made my salad jars.

Salad Jars
Personally I like to have my meat mixture in a different mason jar so I use a medium size and small size jar. The small size jar holds about 3 ounces of ground turkey.
I do this because I like to put the turkey in a microwave safe bowl and heat it before tossing it with the marinade and salad mix. You could also keep it all in one jar and eat it cold.

Equipment
- 4 large mason jars
- 4 small mason jars
Ingredients
- 1 lb 93% lean ground turkey
- 3 cloves garlic minced or pressed
- 1/2 cup low sodium soy sauce
- 1/3 tsp dried ginger
- 1 bag salad mix photo is kale salad mix, can use cole slaw mix
- 2 tbsp green onion sliced
Instructions
- Brown the ground turkey. Meanwhile, combine garlic, soy sauce and ginger in a small bowl. Once turkey is cooked, drain and set aside.
- In the larger mason jars, divide soy sauce mixture evenly. (It will be about 3/4 an ounce per jar). Fill remaining space of the jars with salad mix.
- Divide the turkey meat separately into the small jars. (A packed small jar will be about 3 ounces of turkey).
- When ready to eat, place turkey in a microwave safe bowl and heat 60-90 seconds. Add salad mix and soy sauce to the bowl and toss.
