Don’t be scared of using roast. I know the stringy texture and the solid protein of beef can be intimidating. Yes, the key to this puzzle is to have really moist and tender meat. Something the Instant Pot does very well!

I love roast and carrots any time of the year. I don’t miss the potatoes and find a tender piece of roast with soft cooked carrots always feels like a good idea.

This recipe is simple, using pre-packaged seasoning mixes. To get the carbohydrates down further, go lighter on the seasoning mixes and use beef broth instead of water to replace some flavor. I find if carbohydrates are lower throughout the day, this recipe is fine to keep macros on point.

Ingredients

  • 1 cup water
  • 1 lb lean beef stew meat
  • 12 oz baby carrots
  • 1 packet brown gravy seasoning mix
  • 1/2 (1 oz) packet ranch dressing seasoning mix
  • 2 tbsp Italian dressing seasoning mix
  • 1 onion sliced

Instructions

  • Add water to pressure cooker first.
  • Combine seasoning mixes and toss with beef and carrots. Add to bottom of pressure cooker.
  • Secure lid, close venting valve and set pressure to "meat" or manual for 30 minutes. Allow pressure to naturally release for 10 minutes. Release remaining pressure with caution. Serve.
