The flavor of Jalapeño Poppers but with lower fat ingredients such as turkey bacon, fat-free Greek yogurt and 2% Colby Jack cheese. The topping is spread over chicken breast for a flavorful protein dish.

Ingredients

  • 1 lb chicken breast thinly sliced
  • 4 slices turkey bacon
  • 4 oz Jalapeño, diced canned
  • 5 oz Greek Yogurt 0% fat
  • .5 cup Colby Jack Cheese 2%
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

  • Heat the oven to 375F. Meanwhile, microwave turkey bacon for 2 1/2 minutes and dice.
  • Mix the diced turkey bacon with Jalapeño, Greek yogurt, Colby jack, garlic powder and black pepper.
  • Place thinly sliced chicken into a large baking dish. Coat chicken with the turkey bacon mixture.
  • Bake for 20 minutes or until the internal temperature of chicken reaches 160 F.
