Protein-packed mini-meatloaf, a great dinner option after bariatric surgery

There are so many reasons why this meal idea for Mini Bariatric Sized Meatloaf is one of my all-time favorites. With over 600 recipes on this website, that is saying something!

For one, mini meatloaf recipes are protein packed. Lean ground beef or turkey, an egg, even some grated parmesan cheese increase the protein content.

For two, they are simple to make bariatric-sized. I love using a cookie scoop for my mini meatloaf to create them quickly. Bake them in a silicone muffin for easy clean up!

Mini meatloaf makes great leftovers and fast lunches

Another reason why I really love mini meatloaf for bariatric patients is how quickly they reheat. They store easily and can be reheated in a jiffy for lunch!

A trick to make it lower in carb

You might think, “Steph, what about using oats or breadcrumbs? Is that okay for a bariatric recipe?”

Great question! I have an easy trick for this. Substitute grated parmesan cheese for oats or breadcrumbs. It provides the binding of those traditional starch ingredients but without the carbohydrate. You can use this trick in any meatloaf recipe variation!

Equipment

  • Slow Cooker

Ingredients

  • 1 lb 93% lean ground beef
  • 1 package onion soup mix
  • 1 egg
  • 2/3 cup grated parmesan cheese reduced fat
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 tbsp ketchup lowest sugar available, divided
  • Foil

Instructions

  • In a large mixing bowl combine all ingredients but only half the ketchup (2 tbsp reserved for topping later). Use hand or spoon to mix well until incorporated.
  • Transfer to the bottom of a slow cooker. Use hands to form into the shape of a loaf. Make two foil balls to wedge on both long sides of the meatloaf to help keep its shape.
  • Set the slow cooker for low heat, six hours. When finished, top with additional ketchup if desired (no more than 2 tablespoons).
  • Sliced meatloaf and serve with green beans or creamy mashed cauliflower.
