Sausage Stuffed Zucchini Boats

 

Turkey Sausage Zucchini Boats. Low carb and weight loss surgery friendly!

After seeing several recipes for some sort of stuffed zucchini, I decided to try my hand at it. Super tasty! All the flavors of spaghetti without the pasta and the bonus of some added texture from the zucchini. Look for chicken or turkey Italian sausage to save on fat calories.

Ingredients

  • 4 medium zucchini
  • 1 cup marinara
  • 1 lb Italian Turkey or Chicken Sausage remove casings if bought in links
  • 1 bell pepper (any color) optional
  • 2 cloves garlic, minced or pressed
  • 1/2 cup 2% mozzarella cheese, shredded

Instructions

  • Preheat oven to 400F. Cut zucchini in half lengthwise and scoop out insides using a spoon.
  • Add chicken sausage to a medium nonstick skillet over medium high heat and brown. Add garlic and bell pepper.
  • Pour 1/2 cup marinara sauce in the bottom of a 9x13 baking pan. Spoon meat mixture into zucchini boats and add 2 tbsp of marinara sauce to top of each boat. Sprinkle with shredded cheese.
  • Bake for 10 minutes or until cheese is melted.
