Who doesn’t need another slow cooker recipe??

Who doesn’t need another 4 ingredient recipe?!

Exactly. So why would I not share??

Especially if you are a weight-loss surgery patient. If you’ve had Gastric Sleeve or Gastric Bypass surgery, slow cooker meals mean you can make a lot of food to use for several meals. If you are tired of putting a lot of work into meals you can eat so little of, I encourage you to keep finding exciting ways to make protein meals in your slow cooker!! (Okay, fine…I mean Crockpot®)

Make this meal for the family or load up the slow cooker for several meals until you get tired of it! Add in a bit of plain Greek yogurt will make this a bit creamier if you find the chicken getting dry when you reheat it.

Slow Cooker: 4 Ingredient Green Chile Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 package fajita seasoning
  • 1 (4 oz) can diced green chile peppers
  • 4 slices cheddar or pepper jack cheese reduced fat

Instructions

  • Coat chicken with fajita seasoning. Place in the bottom of a slow cooker. Add green chiles and stir around a bit. Place a slice of cheddar or reduced-fat pepper jack on each chicken breast. Cook on high for 2-3 hours or low for 5-6 hours.
  • Remove from slow cooker and dice into small pieces to allow for eating black bean sized bites.
  • If desired, add salsa or plain Greek yogurt.
