Sun Dried Tomato Meatballs

One of my all time favorite weight loss surgery meal ideas is meatballs. Probably because I LOVE meatloaf and they are these awesome little bariatric sized bites of meatloaf!

At my last count I have posted 17 meatloaf recipes and 10 meatball recipes.

I had to actually laugh aloud when I saw that! It goes to show that the amount of creativity and flavor available in these types of recipes are endless. They are also awesome for freezing and reheating later when you need a fast, protein focused dinner that keeps you on track of your post-op diet.

Total Time: 35 minutes

Ingredients

  • 1 lb 97% lean ground beef
  • 1 egg, beaten
  • 1/4 cup reduced fat grated parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 cup shredded part-skim mozzarella cheese
  • 2 tbsp sun-dried tomato pesto
  • 2 tbsp fresh basil, chopped

Instructions

  • Preheat oven to 350F.
  • Combine all ingredients in a large bowl and mix thoroughly.
  • Form into 16 meatballs. Place in the wells of a mini-muffin plan. You can also line a baking sheet with foil or parchment paper.
  • Bake for 20-25 minutes or until internal temp reads 165F.
