Bariatric friendly easy weeknight meal using ground turkey and zucchini is a simple stir fry
When I feel I am at the cusp of getting stuck in a rut with recipes and cooking, stir fry tends to be a great way to change up my rhythm.
For whatever reason, stir fry isn’t a meal that comes to mind quickly. It is usually when I am trying to think of something that isn’t Mexican or Meatloaf or Chili (favorites in the Wagner house) that I try to go for Asian or Stir Fry.
This recipe was a hit for both me as a cook and me as a diner. The cook part of me enjoyed that it was quick and only needed one skillet. The diner in me enjoyed that it was a good change of flavors without being too overpowering. (I made this recipe first with a rice vinegar and it was more than I preferred!)

Ingredients
- 1 lb 93% lean ground turkey
- 1 tsp olive oil
- 1 clove garlic minced
- 1 tsp ground ginger
- 2 tbsp soy sauce low sodium
- 2 zucchini seeded and diced
Instructions
- Heat a large skillet or wok to medium high heat.
- Add oil then add garlic and sauté. Add ground turkey and ginger. Brown meat and drain.
- Return to heat. Add zucchini and soy sauce. Heat 4 more minutes and serve.
